If you've read anything about healthy eating you've read about healthy oils and coconut oil is one of the healthiest. (Nina Plank is a big fan.) I've recently switched to using this instead of canola oil (or butter) in my recipes. This stuff sells for $14 a jar at Whole Foods, but you get 2 jars for under $10 here.
